This is a stellar coffee that really shows you what can be achieved with processing methods. This spectacular green from "Natcha Coffee" is a whole bunch of love, care, and experimentation thrown at a already great coffee to make something truly unique. This particular batch is called "Natcha 12" and is an *inhale* Carbonic Maceration, 36 hour, Red Wine Yeast Fermentation.
If that sounds like a lot, to be honest it's because it is; but don't be afraid. This has yielded a wild and delicious coffee that will surely push your boundaries but that's what life is about!
Given both this coffee's experimental nature and red wine yeast addition, we thought it would make a great collab with our friends, Wines of While.

Wines of While is an amazing restaurant and wine bar located both in Perth, and in our hearts. Since taking over ownership in 2023, Tom, Emma, and their beautiful team, have raised Wines of While to new heights and cemented themselves as not just wonderful people, but fantastic operators. Wines of While exemplifies everything we think a lunch and dinner venue should be and raises the bar of hospitality of Perth. A perfect and unique mix of high class dining, food, and beverage curation combined with a down to earth atmosphere and crew yields a unique and addictive mix.
Tom loves pushing our boundaries of wine, and we love pushing his boundaries of coffee... so we cooked up something special and decided to do out first collab release with another local business.
It has been our absolute pleasure to share multiple coffees, glasses, plates, and jokes with them over their time at Wines of While so far and we hope it continues for a very long time to come.
